Brazil Cerrado N2/3 SC 17/18 Natural Coffee Beans
This coffee is Rias Coffee's 2025 best value classic masterpiece — showcasing the rich sweetness and stable quality of sun-dried processing from Brazil's Cerrado region.
Originating from the renowned Cerrado region of Brazil, this lot features selected N2/3 grade and SC 17/18 large screen-size batches, cultivated on a commercial scale by local medium-sized farms. The Cerrado region is famous for its elevation of approximately 1,000 meters, dry climate, and fertile red soil, providing an ideal natural drying environment for the natural processing method.
Using the traditional natural (dry) processing method, coffee cherries are laid directly on raised beds or patios immediately after harvest for slow sun-drying over approximately 14-21 days. This process fully develops the natural sugars in the fruit pulp, imparting full sweetness and nutty characteristics to the beans. The cupping profile features bold notes of chocolate, caramel, and nuts, accompanied by roasted aromas of peanuts and hazelnuts, with a woody, tobacco-like stable finish. The acidity is soft and low, the body is thick and substantial with a creamy smooth texture, and the aftertaste offers lasting sweetness.
Roasting Information
Rias applies a Medium-Dark Roast profile, with an initial charge temperature of 195°C, a development time of approximately 11 minutes and 30 seconds, and the roast ends between the first crack and second crack. This roast level fully develops the sweetness and full body brought by the natural processing, presenting the classic balanced, smooth, and low-acidity characteristics of Brazilian coffee.
