Same Quindío volcanic slope, different fruit. Lychee lots crack the orchard; honeydew lots taste like ripe melon. This one is a bite of white peach: pale, perfumed, dewy, finishing like rock-sugar pear.
Process
CO₂ high-pressure anaerobic honey + juice infusion: ripe cherry into sealed steel tanks, carbon dioxide (carbonic maceration) to open cells without losing aroma; natural fruit juice soaks peach and sugar into the seed; depulp, keep mucilage, raised-bed honey dry. Even fermentation, clear fruit, a wrap of honey — peach inside the bean, not painted on.
Cup
Dry: white peach, flower, rock sugar. Hot: white-flesh peach, peach blossom, rock-sugar pear; soft acid, juicy. Cool: peach jelly, a hint of rose and honey. Versus siblings: washed Yu He Pao = photorealistic lychee; Jade Dew honey = lychee nectar; this lot = white peach and pear, pinker, silkier.
Brew
Light to medium-light. V60 or Kalita, 1:15–1:16, 90–92°C, medium-fine, 30–35 s bloom, 2:15–2:40. Hot for blossom, cooler for juice. Iced pour-over and cold brew push the peach.
