Classic washed Arabica from Copán in western Honduras — Guatemala border, Maya ruins nearby, 1,000–1,500 masl (specialty lots often 1,200 m+ SHG). Shade-grown on volcanic highlands. The wash keeps Copán’s signature milk chocolate, caramel and honey clean and round: soft acidity, creamy body.

Copán is one of IHCAFE’s six official regions and part of the Honduran Western Coffees GI. Cool nights (down to about 11°C) and Inga / fruit-tree shade let sugars build slowly. Bourbon, Caturra and Catuai lead; co-op lots may include IHCAFE-90, Lempira and Parainema. Harvest November–March, mostly smallholders.
Process
Fully washed: float-sort ripe cherry, depulp, ferment, rinse mucilage, dry on patio or raised beds. No anaerobic, no barrel — just the region: chocolate sweetness, nut aroma, citrus as a whisper.
Cup
Dry: cocoa, caramel, nuts. Hot: milk chocolate, cane sugar or honey, walnut or hazelnut; acidity like green apple or soft citrus. Creamy, medium-full body. Sweet, steady finish. Less fruit-forward than Santa Bárbara or Montecillos; more “original Copán” than experimental barrel lots.
Brew
Light-medium roast for honey and citrus on filter; medium for chocolate espresso. V60 or Kalita, 1:15–1:16, 91–93°C, medium-fine, 30 s bloom, 2:15–2:40. Press, AeroPress, milk drinks and drip bags all work.
