Coffea canephora thrives in heat and at mid-to-low altitude. Robusta reached East Java around 1900 and southern Sumatra in the 1920s; most lots are still smallholder naturals. Typical elevation 400–900 masl (West Lampung highlands 600–1,100). Volcanic soil plus tropical humidity write cocoa and spice into the seed.
Different from our Gayo Mandheling wet-hulled Arabica: Mandheling is highland herb, wood and low acid. This lot is canephora strength — thicker, more bitter, more caffeine, better under milk and sugar.
Process
Natural / dry process: cherries dried whole on patio or raised beds, then hulled. Mucilage sugars thicken the body and round the bitterness toward cocoa and dried fruit. Even drying and clean storage matter more than the species name.
Cup
Dry: cocoa, roasted nuts, wood. Hot: dark chocolate, roasted peanut or walnut, pepper and wood; very low acid, syrupy body. Long, warm, cocoa-bitter finish. Light roast shows grain and herb; medium-dark roast fills chocolate and crema. Roast this medium to medium-dark.
Use
Espresso for crema and structure. 10–30% in an Arabica blend for fat and backbone. Tubruk, moka pot, French press. Not a light floral pour-over hero.
Brew
Espresso: slightly higher dose, 92–94°C, short shot for cocoa, stop before harsh roast. Filter trial: 1:13–1:14, 88–90°C, coarser, don’t stall. Milk drinks and sweetened ice coffee love it.
