The Lamastus family has grown coffee in Boquete since 1918. Elida is the flagship; more than half the farm sits inside the national park. Aguacate (avocado) is one of the highest microlots, next to Vuelta Centro and Aguacatillo — not the same plot. Aguacatillo is often the honey auction lot. Aguacate Centro EGW is the wash, so the slope leads.
Against our other Panama Geshas: Lion Farm long-bean washed is Boquete perfume; Deborah Afterglow is sunset natural; Deborah Terroir is Volcán washed tea. This is park-side Boquete washed Gesha — whiter florals, brighter acid, honey-cake sweetness.
Process
EGW: ripe-only Gesha, depulp, hand or controlled wash, mucilage off. Dry on raised beds, or in a dark room (DRD): no direct sun, humidity pulled by dehumidifier, about two weeks, then rest. Dark-room drying keeps florals and citrus, and cuts the jam of a sun natural.
Cup
Dry: jasmine, orange blossom, bergamot. Hot: peach, blood orange, rose grape; bright acidity, silky. Cool: honey cake, candied pineapple, melon, a blueberry edge, tea finish. Lots swing between white flower plus stone fruit and grape plus honey cake. Axis holds.
Brew
Light roast. V60 or Kalita, 1:16–1:16.5, 90–92°C, medium-fine, 30–40 s bloom, 2:20–2:45. Hot for jasmine and bergamot, cooler for honey cake and grape. Gentle pour.
