Afterglow natural Gesha from Jamison Savage’s Finca Deborah in Volcán, Chiriquí. About 1,900–2,100 masl, cloud-forest shade, volcanic soil. Ripe cherry slow-dried 20+ days on his three-tier raised beds, moved from heat to cool so sunset stone fruit, rose and mango set into the seed.

Deborah sits on the west side of Volcán Barú. Savage opened it in 2008 from near-primary forest. People said 1,900 metres could not grow good coffee. The farm’s Gesha has since taken gold, silver and bronze on world barista and brewers stages. Afterglow is the lot he built so a natural could be repeated.
Different from our Boquete Lion Farm long-bean washed Gesha: that cup is clear perfume. This one is extreme-elevation natural — silkier body, riper fruit, florals that stay after the light drops.
Process
Afterglow natural: ripe-only cherry, whole-fruit dry for 20+ days on a three-tier bed system. Top tier hotter, lower tiers cooler; cherries move down as moisture and colour change, turned all day. Fruit sugar soaks in; defects stay out. Afterglow, not roast sugar.
Cup
Dry: rose, orange blossom, mango. Hot: strawberry, apricot, white grape; bright phosphoric acidity, silky. Cool: dark cherry, peach, wild honey. Lavender, bergamot and cocoa nib show on some roasts. Axis holds: flower, stone fruit, ripe berry.
Brew
Light roast. V60 or Kalita, 1:16, 90–92°C, medium-fine, 30–40 s bloom, 2:20–2:45. Hot for blossom and mango, cooler for strawberry and apricot. Don’t blast it — Gesha perfume bruises.
