Against our other Panama Geshas: Boquete Lion Farm long-bean washed is Boquete perfume; Afterglow natural is strawberry, apricot and mango afterglow; this lot is Volcán washed terroir — cleaner, more tea-like, brighter acid.
Process
Fully washed: ripe-only cherry, float-sort, depulp, controlled ferment, mucilage rinsed off, dried on shaded raised beds. Sugar stays out of the surface; aromatics and acids stay in the seed. Clean layers, a tea finish, not jam.
Cup
Dry: jasmine, coffee blossom, bergamot. Hot: peach, lime zest, wildflower honey; bright malic acidity, silky juice. Cool: black tea, white peach, mango sorbet. Cherry, vanilla and almond show on some roasts. Axis holds: flower, citrus, honey, tea.
Brew
Light roast. V60 or Kalita, 1:16–1:16.5, 90–92°C, medium-fine, 30–35 s bloom, 2:15–2:40. Hot for jasmine and bergamot, cooler for tea and peach. Gentle pour — tea structure bruises.
