This exceptional coffee comes from El Diviso farm in Huila, Colombia. The rare Chili Bourbon variety is processed with the innovative Thermal Shock Yeast Fermentation Natural method, resulting in a highly distinctive and complex experimental lot.
Thermal shock combined with yeast fermentation and natural drying dramatically enhances boozy aroma, fruit sweetness, and spice layers. Cupping notes are bold and rich: prominent brandy/red wine character with tropical fruit sweetness on the front, followed by dark chocolate, spices and dried fruit warmth, ending with lingering cocoa, vanilla and subtle oak notes. Full sweetness, bright balanced acidity, and a thick, long aftertaste.
Rias uses a medium-light roast to preserve the boozy fruit character and yeast fermentation complexity. Excellent in pour-over, cold brew, and espresso.
