This coffee comes from La Herencia farm in Huila, Colombia, using the rare Sidra variety processed with Slow Anaerobic Natural method — a highly distinctive heirloom experimental lot.
Slow anaerobic natural processing allows long fermentation and slow drying in an oxygen-free environment, greatly enhancing fruit sweetness and flavor complexity. Cupping notes are opulent and rich: elegant floral on the front, followed by tropical fruit and honey juiciness, ending with spice, cocoa and warm undertones. The acidity is bright and lively, with full juicy sweetness and excellent clarity — like drinking a premium floral fruit tea.
Rias uses a medium-light roast to preserve the signature Sidra floral-fruit character and slow fermentation sweetness. Excellent in pour-over, cold brew, and espresso.
