This coffee comes from premium Lancang region in Yunnan, processed with the Anaerobic Slow Dry method, creating a distinctive winey and berry-forward profile.

Anaerobic slow dry processing allows extended fermentation and slow drying in an oxygen-free environment, greatly enhancing winey aroma, fruit sweetness and flavor complexity. Cupping notes are rich and captivating: prominent red wine and blackberry on the front, followed by layered berry sweetness, ending with dark chocolate and spice warmth. The acidity is bright and lively, with full rounded sweetness and long aftertaste — like enjoying berries soaked in red wine with chocolate.

Rias champion team uses a medium roast to showcase the winey berry character. Excellent in pour-over, cold brew, and espresso.
